      <image:title>News - You had me at Dolly Parton | Jolene’s Vintage Wares - Honestly, she had me at Dolly Parton.  I followed her, fell down a wonderful rabbit hole of vintage wares, and before I knew it, I was smitten and had nabbed myself some classic 70’s Japanese ceramic stackable mugs.  My collection from Jolene’s Vintage Wares has grown since that first buy – more stackable 70s mugs, a hand blown coloured Mexican margarita jar that I drink from or pop flowers in, a mid-century Anchor Hocking glass ashtray, an Arcoroc ‘Sierra’ Amber glass bowl &amp; more.  I’ve missed out on plenty too…you have to be quick to nab what you spy on her feed.  Why?  It’s super affordable, and very, very cool.  Every piece I have bought receives comments and envy from people who come to visit.  Each item is so full of character, charm &amp; brimming with nostalgia.</image:title>

      <image:title>News - You had me at Dolly Parton | Jolene’s Vintage Wares - So, who is this hunter, gatherer of collectables tempting my insomniacal online shopping habits? When Joeley isn’t putting her time &amp; love into Jolene’s Vintage Wares, she’s busy working her day gig in TV Production.  It’s a career path that she said has taught her how to be resilient.  With an undeniable passion for op shopping &amp; lover of all things vintage, Joeley decided to start a passion project for herself and earn some extra cash for what she terms her ”mediocre retirement fund”.  Trawling op shops, the street, markets, garage sales, marketplace &amp; from friends, Joeley hunts &amp; gathers, using her astute eye to source stock for her side hustle.  Any trips away from Sydney are an opportunity to check out the local op shops – she’s off to BrisVegas for Xmas and is beyond excited for the treasures she will find on the road trip north, back home, and in-between whilst she is on holidays.  Working in production, it’s evident that she’s organised – she’s already been researching where to shop, and her family in Brisbane are always on the lookout for her too.</image:title>

Joeley adores vintage glassware, and has a cupboard full of glorious glasses from her grandmothers, so lucky for us she has no problem selling the ones she finds.  According to her, they just don’t make glasses like they used to, and I’m inclined to agree.  She is also a sucker for Japanese drip glaze mugs.  If you’re a vintage-wares lover, you’re bound to see something that catches your eye, but be quick if you want to take it home!  Follow her on Instagram.  She always announces what time she’s going to post her next treasure trove of goodies, with sneak peeks at what will be on offer.  Full disclosure, I have been known to set a reminder alarm a couple of minutes before she’s due to post if I have my eye on something.</image:title>

      <image:caption>According to the Macquarie Dictionary, ‘brix’ is the concentration of sugar in solution according to the Brix Scale. Sugarcane from Bundaberg Queensland is what kicks off BRIX’s rum-making, and getting those concentrations perfect is key to creating their molasses-based rums. Molasses is what is left after the sugarcane is crushed and boiled, and the crystallized sugar is removed through a process using centrifuge. The high graded molasses is then mixed with carbon-filtered Sydney water plus flavoured yeast (like Caribbean rum or French champagne) in the fermentation tank, then moved to Molly, the distiller, to make the alcohol.</image:caption>

They tip their hat at the lawlessness of being a Bondi surfer with the “Bondi Drop In” tee or simply highlight their favourite end of the beach with their “South Bondi “shirt.  The “BOONDI” T-shirt is an acknowledgement to the traditional custodians of the land. Boondi being one of the Aboriginal names for Bondi, hence its name today. The profits of sales from this shirt are being donated to The Healing Foundation.</image:title>

In Bondi, the beachside peeps decided it made perfect sense to balance one’s mental health by combining day drinking and exercising. This led to what was locally known as the “Margarita Trail”, a walk/stagger from one end of Bondi to the other stopping in at the multitude of cafe’s now offering coffee AND alcohol.   Like a lot of things in Bondi, it was both absurd and really funny.</image:title>

They decided that the business should be called ibondi as that reflects their view of Bondi. It’s their Bondi, how they see it and how it’s been throughout the time they have lived there. The M.O. is simple - make it fun. “We are just doing our own thing and want to have fun doing it” says Davor also adding “there is no shortage of inspiration around here. Paul and I regularly have conversations where we just laugh our asses off at the hilarious things that people get up to and before you know it, we have another design.”</image:title>

The farming families from Colombia, Brazil, Ethiopia and beyond receive educational, housing, healthcare, and other benefits beyond the basic Fair-Trade level. As to the big Loring Roaster itself, its single burner convection design roasts beans and incinerates the smoke, so no external afterburner is needed. This means less fuel, less expense, and less environmental impact with up to 80% fuel savings and reduction of greenhouse gases in every roast, compared to conventional roasters.       <image:caption>Twelve years ago, Marcio kicked off by opening Kings Lane Café in Darlinghurst. Whilst there, he got himself a ‘baby’ (1-kilo capacity) roaster and started his self-led alchemy apprenticeship with learning how to create the perfect roast and bring his product to market. Marcio roasted the green coffee beans in small batches, trialling each brew with customers, taking notes of his process and customer feedback that filled the thick taste ‘bibles’ he still has today. The beans took over, and he went from roasting 300 kilos a week to 500-600 kilos a week. After ten years, Marcio needed more space and a bigger roaster. He moved operations to a larger space in St Peters and invested in a big Loring (U.S.A) roaster that could roast 120 kilos per hour, effectively a tonne per week.</image:caption>

      <image:caption>SO, how do we pair these wonderful wines with our meal? Instead of listing certain dishes to pair with these wines, let’s look at some simple guidelines you can use for food and pairing in the future no matter the wine or food! Wine and food is all about structure – Acid, tannin, sweetness, salt, umami, bitterness etc. There are a few simple ways you can ensure that you (almost) always get the pairing right. Sweet or umami flavours in food makes the wine seem more drying and bitter, more acidic and less sweet and fruity. These are flavours aren’t considered wine friendly. A rule of thumb when pairing desserts with wine is to go with a wine that has more sugar than the food. Example wines include a German Auslese Riesling, Sauternes and Tokaji Aszu.   Salt in food is magic for wine. Especially for wines with a lot of tannins. Salt makes the wine less drying and bitter, less acidic and fruitier and adds to the perception of body. Example wines include Cabernet Sauvignon, Shiraz, Malbec and Nebbiolo.</image:caption>

While it was frustrating, Jen is grateful that the government COVID Relief package meant she could still pay the bills.  It also gave her the time to consider going online and launching her website and online store. Considering she has run her business for almost 20 years, the lockdown period was a welcome break for her, a sort of forced long service leave. Jen has been grateful for the opportunity to have all of her weekends off during the past five months. Now that she has an online presence, it will require some more working hours, but she plans to outsource the marketing so she can continue to enjoy the flexibility and freedom she has enjoyed for so long.</image:title>

      <image:caption>Make the stock: Use the prawn heads to make a nice stock. Boil with water, herbs like parsley and rosemary, a bit of onion and a touch of EVOO (Extra Virgin Olive Oil), let it boil for 20/25 minutes with low flame. When it’s ready strain in a colander or sieve. Make the sauce: Take a pan and add a bit of EVOO with 1 head of garlic, a bit of black pepper, a bit of chilli (depends if you like it spicy), let them go until the garlic gets gold and releases the flavours in the oil, at this point remove it and add a touch of white wine, let it evaporate, after this add the cherry tomatoes you prepared previously and let it go for a few minutes.  You don’t want the tomatoes to be cooked through - they should taste fresh. Cook the pasta: Ideally cook the pasta al dente. Boil the water and add pinch of salt. A good tip is: As soon as it’s boiling add the pasta and follow the instructions, for example if the packet says 10 minutes, take the pasta out 2 minutes before. When cooked al dente, add to the pan with the sauce, add the prawns and add the stock gently using a spoon. Like the method you use for risotto. Slowly. Add chopped basil on top for serving, along with lemon zest, or bottarga – which is also a great touch.</image:caption>

      <image:caption>Seafood pastas are a classic summer dish which is enjoyable for everyone, and the wine will perfectly sublimate it. It possesses a mild and fresh flavour and the saltiness coming through evens out the acidity of a light-bodied white wine. A pinot Grigio is an extremely food-friendly style which make the shrimps the finest pairing partners. Pinot Grigio wines are refreshing, dry, crisp, and they will not overpower the freshness and flavour of the seafood, so we will pair it with a light to medium-bodied white wine. The king prawns will be enhanced by the high acidity and fruitiness of the wine. Pinot Grigio characteristics are mainly primary fruit flavours of lime, lemon, pear, white nectarine, and apple. Pinot Grigio ranges between faint honeyed notes, floral aromas like honeysuckle, and a saline-like minerality which will be delightful for the garlic prawn pasta with a hint of fresh chili. I chose ‘Pigio’, an organic unoaked pinot Grigio from the Veneto region in Italy. The excellent balance between acidity and body makes this wine refreshing and the finish is pleasantly fruity. As our recipe contains cherry tomatoes, we can also pair it with a light rose from Provence like Whispering Angel, a medium-bodied and fruity refreshing wine with a crisp acidity.</image:caption>

Since then, it's been the go-to for the lovely locals in the Sydney’s Eastern Beaches. With BYO wine at only $12 corkage, why not stop in at our new bottle shop, and then go and enjoy a cooking-free night at this institution since 2010 that inspired the Surry Hills venue opening two years afterward.  Naturally, we couldn’t give you their secret recipe for the Sorrento pizza, but Head Pizza Chef, Emmanuele Lugas has given us a delicious prawn linguine to make at home.  Pairing comes from Leire who has recently returned from a few months in Europe. Very happy to have her smiling face back at Bayswater Fine Wines!</image:title>

      <image:title>Recipes - Chicken and egg noodle soup with ginger and chilli - Wine pairing: Jules Taylor, Grüner Veltliner, 2021, Marlborough NZ The most planted grape in Austria, Grüner Veltliner, has found a comfortable home in New Zealand’s South Island where the cool climate and mountainous landscape allow the grapes to fully ripen whilst maintain their bracing acidity and delicate aromas. Classically, Grüner (as its colloquially known) produces dry aromatic white wines, with a subtle green hue, tingly acidity; and notes of grapefruit, white nectarine and white pepper on the finish. The chicken noodle soup is a dish that’s aromatic, spicy and sour all of which can be said of Grüner. Chicken is a delicate protein, which the wine supports without detracting from, the high acid helping to cut through the richness of the broth. The aromatics in the dish are well complimented by the wine’s delicate aromas and its slight pepperiness. The soft fruit of the wine also serves well to contrast the heat of the chili vinaigrette whilst still having the acidity to stand up to the vinegar.</image:title>

I love helping customers discover new wines and finding the best wine pairing with food.” His passion for wine began with Australian Riesling, which he feels is still a very underrated wine, with its refreshing acidity making it a great food wine. Cameron has his WSET II and is waiting on his WSET III results. He’s currently enrolled in the Italian Wine Scholar course and is enjoying all the varied and many wonderful wines of Italy. When we choose wines for BBQ’d seafood we need to consider not only the flavour profile of the hero ingredient but also the marinades, sauces and sides. Our personal preferences in terms of wine styles is also paramount.   To really get the best out of your chargrilled smokey feast we have to match and enhance the flavours of our food with the wines we select. If the overall flavour profile is light i.e. white fleshed fish, oysters and very lightly seasoned seafood then your favourite Rosé or light bodied Chardonnay or Sauvignon Blanc may just be the answer.
